Dear Shareholders:

We are shifting towards cutting smaller amounts of pork more frequently as it makes our work flow more consistent and manageable.

I have highlighted some of the more frequent things included in this months shares, but we’re finding that we don’t always have enough of each item for every share. In this case we substitute something similar, so each share comes out to the same value.

Special Items in This Months Shares

(depending on size and meats you selected)

Pork Shoulder: either picnic, shoulder or butt, all come from the pork shoulder area and are great for slow roasting. (Full and Basic shares)

Chicken Wings: the National Chicken Council reports each year, we eat a record-breaking 1.4 billion wings on Super Bowl Sunday (Full shares)

Lamb Shanks: for those that opted in for lamb, from Five Sigma Farm. Best braised or slow cooked until the meat is fork tender. (Full shares)

Baked Chicken Wings

Baked chicken wings are easy to make, and they come out crispy and delicious.

Ingredients

  • Chicken wings
  • 2 tablespoons butter, melted
  • 2 teaspoons Diamond Crystal kosher salt (if using fine salt, you might want to use less)
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (or smoked paprika)

Steps to Make It

  1. Preheat your oven to 400 degrees F. Line two rimmed baking sheets with foil and fit the baking sheets with wire racks.
  2. In a large bowl, toss the chicken wings with the melted butter.
  3. Arrange the coated chicken wings in a single layer on the wire racks, not touching each other. Sprinkle them with salt, pepper, garlic powder, and paprika.
  4. Bake the wings until they are cooked through and their skin is browned and crispy, about 40 minutes.
  5. HIGHLY RECOMMENDED: For extra crispy wings, bake the wings for just 30 minutes, then leave them in the oven, lower the oven temperature to the “keep warm” setting (170 degrees F), and keep the wings in the oven for 30-60 more minutes.
