Archway Farm is a pasture based livestock farm focused on growing, processing, and selling high quality meat products. Our USDA facility processes small batches of pork, beef, lamb and chicken available for sale in our farm store. Archway is a family business run by a tight-knit crew of dedicated farmers and butchers.

Meat Processing and Butcher Assistant 

183 Arch Street, Keene, NH
Part time, hrs flexible. On-site, Monday-Thursday.
$15- $20 hourly, D.O.E.

As a member of the processing team you will assist the lead butcher in breaking down whole animals into a variety of retail cuts as well as performing numerous other kitchen related tasks. You will get on the job experience breaking down carcasses, learning cuts and how they are prepared and preparing value added products such as bacon, ham and sausage. In addition you will have the opportunity to interface with customers, perform farm related tasks as needed and contribute to the overall culture of Archway Farm. 

Responsibilities

  • Work in our on-farm USDA inspected processing plant which produces ~ 500 – 1,000 lbs of meat per week of varying species.
  • Develop / hone fast and efficient knife skills.
  • Assemble, disassemble and use grinding, stuffing and cutting equipment properly.
  • Grind, mix and stuff a variety of sausages. Accurately measure ingredients and spice blends according to recipes.
  • Package and label meat for retail and wholesale distribution following established labeling protocols. Follow proper weighing and pricing guidelines as per establishment.
  • Follow food safety and handling procedures as laid out in the establishment HACCP plan.
  • Follow and comply with establishment procedures of health, sanitation, work safety practices.
  • Clean / maintain equipment, hand tools and work surfaces including floors and walls.
  • Assist in stocking and inventory of products available in store and backstock.
  • Communicate with supervisor; voice quality issues, ask clarifying questions and develop ability to assess products.

Experience and Requirements

  • Experience working in food production is not required but heavily considered. (cooking, butchery or manufacturing) Food Safety training also preferred.
  • Must be able to lift and carry 50+ lbs.
  • Desire to perform a variety of tasks in a given day.
  • Ability to follow directions with attention to detail and complete multiple tasks independently.
  • Fine motor skills. Be able to grasp, push, pull and lift. Use equipment with small pieces.
  • Ability to bend, squat, twist, lift and reach. Stand in place for extended periods of time. 6-8 hrs.
  • Exposure to low temperatures (30-40° F degrees) for extended periods and sub zero freezer for short periods of time.
  • Transportation, ability to show up regularly and reliably to scheduled work times.
  • Strong work ethic, desire to complete tasks and work as a team member.
