Dear Shareholders:

One of our meat share pick up freezers failed on me earlier this month. Not exactly what I was planning on, but the up side is we have two new slightly larger pick up freezers. This should hopefully make finding your share a little easier, especially if you are one of the first to come.

We have found it challenging to produce enough smoked hams to fill all of our meat shares, so we have opted not to include them with this months share. We do still have some available in the store for purchase if you are looking for a traditional Easter meal.

Special Items in This Months Shares

Beef Sirloin Steaks: Top sirloin is located between the tender shortloin and the tougher round. I think of it as a moderately tender steak, between the tougher round steaks and the tender marbled New York strip.

Chicken Drumsticks: Drumsticks are popular for roasting, grilling, and frying because they are easy to handle and difficult to overcook.

Recipe of the Month

Beef Sirloin Steak

My go to method of cooking steaks when I don’t want to start the grill. We cut these sirloin steaks relatively thin, so it won’t take long to cook them through

Instructions

  1. Preheat oven to 300 degrees and place rack in center of oven.
  2. Prep all ingredients so they are ready to go when needed.
  3. Sprinkle both sides of steak with sea salt and pepper.
  4. Place cast iron skillet or other heavy pan on medium/high heat and allow to heat for several minutes.
  5. When pan is hot add enough olive oil or butter to coat bottom of pan.
  6. When oil or butter are hot add meat to pan.

Sear steak for 3 minutes each side. Place steaks in an oven safe dish and place in oven for around 5 minutes to rest. Check the internal temperature to ensure they are cooked to your desired doneness.

  1. Add a couple tablespoons of butter to the cooking pan
  2. Add diced onions or shallots, stirring frequently for a couple minutes
  3. Deglaze pan with a small amount of white wine, sauté for one more minute. Season with salt and pepper.
  4. Top steaks with wine reduction and serve.
