Dear Shareholders:

We hope you have been enjoying our new space! Our landscaping project is finally wrapped up and we are happy with the results. Team member Josh lovingly planted all the trees, shrubs and plants sourced from Nasami Farm Nursery and installed the split rail fence along the parking lot.

As promised, the team at Archway has been working poultry sausage into production this month. Two flavors of turkey links have debuted at the store with a warm reception. Turkey Tomato Pesto for your grilling pleasure and Turkey Weisswurst, a smoother sausage seasoned with parsley, lemon and warming spices. Next up is chicken breakfast sausage (our signature breakfast flavor with a leaner protein) and a chicken link that will remain a surprise.

This month we’ve been hosting new vendor Well Seeded Gardens in the store. We are so happy to welcome them with their bouquets of fresh herbs and flowers that flavor our meats and brighten our homes. Right now they are also selling new potatoes and dragon beans which has me in the mood for my favorite potato salad. Located only two minutes from Archway in a residential neighborhood, Well Seeded Gardens owner Lauren has converted her front and back garden into an 80+ garden bed micro-farm. This is as local as it gets folks!

Tomato Pesto Turkey Links: We hope you’ll love this summery sausage link featuring Well Seeded Gardens basil and Green Wagon tomatoes that can be enjoyed in a bun or your favorite pasta dish.

Bone-In Ribeye Steaks: Riding high on the thrill of last month’s Filet Mignon, we wanted to bring you another choice cut of beef from our very own grass-fed herd. Cut from the rib section of the loin, this tender steak can be cooked in a variety of ways: grilled, seared or roasted. For best results don’t forget to rest the steaks before and after cooking.

Chicken Wings: In my house the wing is king. We get so greedy about wings at home, we even remove them from our whole roasting chickens. My go-to flavors for seasoning wings are usually Buffalo, BBQ, salt & pepper and Laab (a mix of spicy and zesty Thai herbs). However, I’ve also been known to stray from my go-tos into honey mustard, garlic parmesan, sweet & sour and Old Bay. There is really no shortage of flavors for wings!


Recipe of the Month

Perfect Baked Chicken Wings

Making perfect crispy chicken wings doesn’t require any special equipment or technique. This is an easy recipe to get perfect wings that can be served right out of the oven and slathered in your favorite sauce. This time of year I like to serve my wings with a side of slaw or potato salad and some corn on the cob. Pass the paper towels!

Ingredients

  • 2 pounds of chicken wings
  • 2 tablespoons of flour
  • 2 teaspoons of baking powder (aluminum free)
  • 1.5 teaspoons of salt
  • 1 teaspoon of pepper

Steps to Make It

  1. Heat your oven to 400 degrees.
  2. Mix together all dry ingredients in a mixing bowl.
  3. Pat the chicken wings dry with a paper towel and toss them around in the mixing bowl to coat.
  4. Arrange wings on baking sheet (you can use a wire rack to circulate heat under wings if desired) leaving space between each wing.
  5. Bake at 400 for 15-20 minutes until crispy. Pull from oven, flip wings and continue to bake for another 15-20 minutes. The temp should read 160-165.
  6. Season and eat immediately.

Sweet and Sour Sauce

While the wings are cooking you can throw together a simple sweet and sour sauce.

Ingredients

  • ¾ cup brown sugar
  • ⅔ cup water
  • ⅓ cup white vinegar
  • ¼ cup soy sauce
  • 2 tablespoons cornstarch
  • 1 tablespoon ketchup

Steps

  1. Whisk all ingredients together in a saucepot and cook over medium high heat until it comes to a boil and thickens.
  2. Remove from heat and let rest. You can stir in a bit of green onion and sprinkle with sesame seeds for a more festive look.
