When we break down a whole pig we start by separating the largest muscle groups into what are called primals. At a high level these are the shoulder (front leg), loin, belly (ribs & bacon), and ham (rear leg). Each of these primals is then broken down into smaller “retail” cuts.
The butt and picnic roasts both come from different places on the shoulder (front leg). The butt is higher on the shoulder and the muscles are not used as much as the picnic, which is lower. Both roasts have a good amount of marbling (or fat mixed in) so are great used in low and slow cooking recipes.
