At the Farm Store: Mar 10 – Mar 16

We hand cut our bone in chops all one rib thick. That’s partially because we don’t have a bandsaw, and it’s practically impossible to cut through ribs lengthwise with a hand saw. But its also because we feel this produces a nicer pork chop.

This week we cut a limited number of frenched chops, where that rib bone is left a little longer and the meat is cut away to show the bone (extend that bone a little longer and it’s a tomahawk). We also cut a limited number of porterhouse chops. These don’t include a rib bone, as they are lower down on the loin. But are cut to include the tenderloin as well as the loin muscle.
