We used local arugula from Lucky 13 Farm in Winchester in our latest house made sausage. We blanched and chopped the arugula and then added it to our pork with garlic, parmesan cheese, white wine, and lemon. Get it while is lasts, like the spring arugula I don’t expect these to be around for too long.
