At the Farm Store: Apr 7 – Apr 13

We sold out of larger hams this week, but still have a good selection of ham steaks and smaller (1-2 lb) ends for last minute Easter shopping.

I happened to see an interesting article in the New York Times about how AI and DNA are being used in global supply chains to help track where products actually come from. It made me reflect on our own supply chain where every cut of pork can be traced back to a specific animal that was born on our farm. All meat products in larger grocery stores, even the regionally branded products, come through aggregators and distributors and the stores would be hard pressed to tell you where the pig itself actually was raised.
