A quick rib primer – there are two primary rib cuts from pork:

Spare ribs – are the lower (closer to the belly) portion of the ribs. St Louis ribs are a variation of spare ribs with the end tips trimmed off.

Baby back ribs – are the upper (closer to the back) portion of the ribs. We only rarely have this cut because most of the time this rib ends up being part of our bone in pork chops.
